The Viewfinder: Parched Hospitality opens Isla & Co. in West Palm Beach


Australia-based Parched Hospitality Group, which has several restaurants in New York City, has brought Isla & Co. to South Florida. Created by partners/co-owners Barry Dry and Tom Rowse, the eatery opened today at 1401 Clare Ave., in West Palm Beach’s Warehouse District.

Exclusive chef Matt Foley crafted an all-day menu that includes specialty coffees, plus breakfast and brunch dishes inspired by Australia’s coastal towns, with influences from a variety of cultures. The evening menu draws influence from Australia, Europe and Southeast Asia.

The restaurant seats a total of 140 guests in 2,704 square feet inside and 1,000 square feet outside.

Isla & Co. is planning to open a second South Florida location at 300 31st St. in Miami Beach. The 2,600-square-foot eatery will accommodate 150 diners.
